Hello everyone! Beautiful fall weather we have. It’s time for pumpkin desserts of all kinds. This week’s recipe comes from my Aunt Ginks, my daddy’s sister. All of my aunts were excellent cooks.

I had the best childhood spending the night with my aunt Bonnie and my grandmother. They taught me to cook, sew and crochet. It was always a good time.

It will be coming out after Halloween, so I have to tell some funny Halloween stories. I always took my nephews, Jason and Michael, and my niece Kelly, trick or treat. So I always had to dress too. Once Lisa Smith Favela and I dressed as old women. We had everything, clothes, jewelry and handbags. We went to the Countryboy and asked the manager for a senior citizen discount. He thought we were really old people and acted half scared of us. Moments of fun!

Once, while we were going out for a treat or a spell, we went to an elderly couple’s house. They didn’t have any candy for us but asked us to wait at the door. We waited patiently for the woman to return with something wrapped in foil. We were so excited to think it was brownies. When we got home and unpacked them it turned out to be cornbread. We were so disappointed. Good, fun memories, however!

Every Halloween I make a big pot of chili and invite the whole family over. I make a lot of desserts and we all have so much fun. I love handing out sweets on the go or to gourmets! I always have full-size candies to hand out.

3 cups of sugar
1 cup of oil
1 can of pumpkin (15 oz)
2/3 cup water
4 eggs
Mix well with your hand mixer. Add:
3 1/2 cups all-purpose flour
2 tbsp. baking soda
1 C. baking powder
1 C. salt
2 tbsp. cinnamon
1 C. Nutmeg
1 C. allspice
Mix well, add a cup of nuts of your choice. Bake at 300 degrees for 30 to 40 minutes until cooked through in the center. That makes four or five loaves of bread. Do not overfill the pans. Take out of the oven, cut a piece and add butter – yum, yum!
